HISTORY
Our History Greg Barnes, founder and owner of Fireside BBQ, was a firefighter for the Overland Park Fire Department for 32 years.  He had many important responsibilities with the department, but most important was as cook for the shift… at least that’s what you would hear if you asked his fellow firefighters.  Typically, firefighters share this responsibility, but when someone's cooking skills stand out, they tend to find ways to arrange responsibilities so that they are more available to cook.   Greg had grown up watching his late father, Jack Barnes, barbecue in their backyard, mostly ham and chicken, to rave reviews from family and friends. He later convinced his father to add more barbecue items to their menu and the two began competing in area barbecue competitions in the early 1990’s under the name “Jacks or Better”.  They started using his father’s recipes and made improvements as they became more seasoned competitors.  Jack eventually retired from the barbeque competitions and Greg took on a new barbeque partner, fellow firefighter Tim Byrnes.  They did very well in the competitions and won many trophies and ribbons. Friends, family and others in their extended firefighting family began requesting Jacks or Better to cater weddings, graduations, fundraisers and other special events.  Jacks or Better soon evolved from barbeque competitions to catering barbeque.  As most firefighters do, Greg took this on as a second job.  Working 24-hour shifts, work weeks are typically three days, leaving several full days to take on additional responsibilities.  Greg was not afraid to work hard, and eventually filled his days off with catering events. Greg catered barbeque for 15 years, constantly hearing from all who enjoyed his food, “you need to open your own restaurant”.  After 32 years with the fire department, Greg decided the time was right to pursue his dream and retired from the fire department on March 27, 2014. He had long wanted to open a barbecue restaurant.  His daughter, Kelly Barnes, and nephew, Ryan Barnes, gave him the push he needed, promising to sign on as his managers.  They were soon joined by their cousin JP, taking their barbeque expertise to now a third generation of Barnes’.  Growing up with a family-owned business himself, this made everything perfect.   Our Philosophy The Fireside philosophy is to offer quality award-winning BBQ in a friendly neighborhood environment.  As a firefighter, Greg has always loved serving his community and Fireside allows him to continue his gift with good food and a friendly atmosphere.  Greg has always thought that for truly good barbeque, the flavor of the meat should stand on its own, so the tagline “Our meat is boss, without the sauce…” logically emerged.  Along with good food, our goal is to provide a personal touch that is unique to our restaurant.  Greg and his family make friends and family a priority and love to extend that circle to their customers.  They spend as much time as they can in the dining area, where they can truly get to know their customers.  It’s that personal touch that makes the difference. The restaurant’s focus is on public servants.  Although the theme is primarily firefighting, Fireside’s goal is to honor and recognize the sacrifices made by all public servants:  firefighters, police, the armed services and our veterans.  Our name, Fireside, was created from this theme.  Friends and patrons of Fireside have donated memorabilia to be displayed and shared with our customers and we proudly display our trophies and ribbons from our barbeque contests.  Come see the difference and enjoy the Fireside experience. Our Menu Today the Fireside BBQ dine-in menu includes many of the favorites from the barbeque contests and more.   Tender smoked barbequed meats, award winning sides and tasty dump cake for dessert.  The take-out menu has all the items on the dine-in menu, plus meat by the pound and larger quantities on sides.  Our catering menu is available for groups of 50 or more. Fireside’s dessert option is Dump Cake, a delicious combination of cake and fruit.  We offer three flavors – cherry, peach and apple pecan.  Greg grew up making dump cakes as a Boy Scout.  He introduced it to his fellow firefighters at the station and it was a hit.  They had no problem with experimenting at the station and got creative with flavors. Our Hours Fireside BBQ’s hours are restricted to 5 hours of operation during weekdays and a full 8½-hour day on Saturdays, closed most Sundays. Fireside is a family owned and operated business and they are starting off slow. They don’t want to get burnt out right off the bat, so they are wisely only open during the busiest times of the day. On weekends, Barnes concentrates on his catering operation. But he also might take a weekend off to do “things I missed out on when I was working as a fireman. We only had one weekend off a month.” Fireside is open 6 days a week, Monday through Saturday.  And open once a month on Sundays to sponsor a car cruise in the parking lot. Car Cruises hours 3:00p.m. – 7:00 p.m. Sunday, July 12 Sunday, August 9 Sunday, September 13 Sunday, October 11 The car cruises are available during the summer only.  October is the last one this year and they will be back next May. Our Future Fireside is always looking for more ways to bring our customers what they want.  To build on our goal of serving the neighborhood, we are expanding our services by becoming a drinking establishment in late summer, early fall of 2015.  You will begin to see improvements to our dining area as we add our bar and some different options for seating.  We will be adding patio seating as well.  Our goal is to be your Overland Park neighborhood “Cheers”. Fireside BBQ continues to grow, as more and more people discover us. Our growth has been strictly based on “word of mouth” by satisfied Fireside customers and we are amazed at how fast the word is spreading.  Come see what your neighbors are talking about and spread the word if you like what you see and taste.
